Ingredients :

4 sweet potatoes

1 tablespoon olive oil

1 red bell pepper, diced

1 yellow onion, diced

1 cup cooked black beans

1/2 teaspoon chili powder

1/4 teaspoon cumin

1/4 teaspoon garlic powder

Salt and pepper, to taste

1/4 cup chopped cilantro

1 cup guacamole

Directions :

1. Preheat oven to 375°F.

2. Pierce the sweet potatoes with a fork and place on a baking sheet.

3. Bake for 45 minutes, or until soft.

4. Meanwhile, heat a large skillet over medium heat and add the olive oil.

5. Add the bell pepper and onion and sauté for 5-7 minutes, or until softened.

6. Add the black beans and spices and cook for an additional 3-5 minutes.

8. To assemble, cut the sweet potatoes in half, lengthwise, and top with the sautéed vegetables, black beans, cilantro, and guacamole.

9. Serve immediately.
