Prep Time: 10 minutes

Ingredients : 

1 tablespoon of olive oil

1/2 cup of diced onion

1 clove of garlic, minced

1 teaspoon of grated ginger

1 teaspoon of curry powder

1/2 teaspoon of cumin

1/4 teaspoon of turmeric

1 can of coconut milk

2 cups of vegetable broth

2 cups of cooked noodles

1/4 cup of chopped cashews

1/4 cup of chopped cilantro

Salt and pepper, to taste

Directions :

1. Heat the olive oil in a large pot over medium heat.

2. Add the onion and garlic and cook for 5 minutes, stirring occasionally.

3. Add the ginger, curry powder, cumin, and turmeric and cook for 1 minute.

4. Add the coconut milk and vegetable broth and bring to a boil.

5. Reduce heat to low and simmer for 10 minutes.

6. Add the noodles and cook for 5 minutes.

7. Remove from heat and stir in the cashews and cilantro.

8. Season with salt and pepper, to taste.
