Ingredients : 

1 head of garlic

2 tablespoons olive oil

1/4 teaspoon salt

1/4 teaspoon black pepper

8 ounces whole wheat spaghetti

2 cups broccoli florets

2 cups cherry tomatoes, halved

1/2 cup grated Parmesan

1/4 cup chopped fresh basil

Directions :

1. Preheat oven to 425°F.

2. Cut the top off the garlic head to expose the cloves.

3. Place the garlic head on a sheet of aluminum foil and drizzle with the olive oil.

4. Sprinkle with the salt and pepper.

5. Fold the foil to form a packet around the garlic head.

6. Roast in the preheated oven for 25 minutes.

7. Meanwhile, cook the spaghetti according to package instructions.

8. Add the broccoli florets to the boiling water during the last 3 minutes of cooking.

9. Drain the spaghetti and broccoli and return to the pot.

10. Squeeze the roasted garlic cloves into the pot and stir to combine. 11. Add the cherry tomatoes and Parmesan and stir to combine. 12. Serve topped with the fresh basil.
