Prep Time: 10 minutes

Ingredients :

-1 tablespoon of olive oil

-1/2 cup of diced onion

-2 cloves of garlic, minced

-2 large zucchinis, spiralized

-1/4 cup of natural peanut butter

-1/4 cup of water

-2 tablespoons of soy sauce

-2 tablespoons of rice vinegar

-1 teaspoon of grated ginger

-1/4 teaspoon of red pepper flakes

-Salt and pepper, to taste

Directions :

1. Heat the olive oil in a large skillet over medium heat.

2. Add the onion and garlic and cook for 5 minutes, stirring occasionally.

3. Add the zucchini noodles and cook for an additional 5 minutes, stirring occasionally.

4. Meanwhile, in a small bowl, whisk together the peanut butter, water, soy sauce, rice vinegar, ginger, and red pepper flakes.

5. Remove the zucchini noodles from heat and stir in the peanut sauce.

6. Season with salt and pepper, to taste.

7. Serve warm.
